Simple delectable recipes

Pandan Puto

Ingredients:

  • 160g Freshly grated coconut, from half coconut
  • 3/8 tsp Salt (for grated coconut)
  • A bunch of pandan leaves
  • 100ml Water
  • 160ml Coconut cream
  • 160ml Coconut milk (for pandan paste)
  • Vegetable oil
  • 2 Eggs
  • 150g Granulated sugar
  • ½ tsp Vanilla extract
  • ½ tsp Cake stabilizer
  • 185g All-purpose flour
  • ½ tsp Salt (for Cake batter)
  • 160ml Coconut milk (for Cake batter)

Instructions:

  1. In a heatproof bowl, mix grated coconut and salt together. Add pandan leaf on top. Put on the Pro Steamer and steam in the Microwave Oven for 10 minutes to prevent the coconut from going bad easily. Set aside.
  2. For pandan paste, blend pandan leaves, coconut milk and cream. Set it aside.
  3. Grease the molds with vegetable oil. Set aside.
  4. With a hand mixer or a stand mixer with a whisk attachment, combine eggs, sugar, vanilla extract, and cake stabilizer. Beat on high speed until white and fluffy.
  5. Sift in the flour and salt. Then, add half of the coconut milk and whisk until well incorporated. Gradually add the remaining coconut milk and whisk until well combined.
  6. Add the pandan paste and whisk the batter until well incorporated.
  7. Pack the grated coconut each on the bottom of the molds with your finger or a spoon. Pour the pandan cake batter on top until almost full (leave a little bit of room for the batter to rise).
  8. Tap the molds on the countertop to get rid of air bubbles.
  9. Steam the cakes for 10-13 minutes in the Microwave Oven using the Pro Steamer. You will know they are done when a toothpick inserted comes out clean.
  10. Let them cool in the molds for 5 minutes. Loosen the edges with a knife and flip the molds over so that the grated coconut is on the top.

Avocado Milkshake

Ingredients:

  • 240ml Whole milk
  • 120ml Sweetened condensed milk
  • 2 Medium avocados, halved, pitted and flesh scooped
  • 285g Ice
  • 60ml Brewed coffee
  • A pinch of kosher or sea salt
  • Chocolate syrup, for drizzling (optional)

Instructions:

  1. In a blender, combine whole milk, sweetened condensed milk, avocado, ice, coffee, and salt.
  2. Blend on high speed until smooth, 30 seconds to 1 minute; if the shake is thicker than you'd like, blend in more milk to thin slightly.
  3. If desired, drizzle chocolate syrup on the inside of serving glasses, then divide the shake evenly between glasses and serve.
