Golden fluffy roasted potatoes

Ingredients
· 3 ½ pounds Russet potatoes, cut into large chunks
· 1 ½ cups vegetable oil
· 4 bay leaves
· 1 lemon, zested
· 4 tbsp plain flour
Recipe steps
Fill top corner of Steam Cook tray with water to the max. Heat the oven to 400°F Steam Convection on High Steam.
Put the cut potatoes onto a tray, toss with 2 tbsp of the vegetable oil and cook for 25 to 30 minutes until tender when pierced with the tip of a sharp knife.
Vigorously shake the tray to slightly fluff up the potatoes. Turn the oven to 450°F Top Heat + Convection. Spoon the remaining oil over the potatoes until coated.
Nestle in the bay leaves and lemon zest, then season generously with sea salt.
Dust with flour and roast for 35 to 40 minutes until golden and crunchy, turning them over halfway through cooking.
Remove from the oven and serve warm.
